Asiago is a wonderful town of the homonymous upland in Veneto 1000 meters high. Here, it is made Asiago DOP from cows of Alpine huts and valleys, one of the most famous and appreciated Italian soft cheese, versatile and tasteful in the fresh version, but great also in the seasoned one.
Taste & Characteristics
Fresh, pressed Asiago has a pale straw-yellow colour, soft cheese and irregular holes, butter scent, sweet and delicate taste, never too salty. “Allevo” instead has a darker colour that goes to the amber, a persistent scent with notes of dry fruit, a more compact texture, a strong taste and spicy notes in the seasoned wheels.
