Montasio DOP is a cooked curd, semi-hard mature cheese, with regular small eyes named after the plateau of the same name located in the Friulian Mountains.
On the palate it is soft, fresh, delicate but well structured and tasty. It smells of nature, with sweet hints that recall honey. The paste is ivory white or slightly coloured, has a compact consistency, with partridge eye holes, internally shiny, small and homogeneous. It has a smooth, regular, thin, elastic and straw yellow rind.
